Shrimp Scampi

  • ¼-⅓ cup butter
  • lb uncooked, deveined, peeled shrimp thawed if frozen, tail shells removed
  • 2 tablespoons thinly slicked green onion
  • 1 tablespoon chopped fresh or 1½ teaspoon dried basil leaves
  • 1 tablespoon chopped fresh parsley or ¾ teaspoon parsley flakes
  • 2 tablespoon lemon juice
  • ½ cup white wine
  • ¼ teaspoon salt
  • 4 cloves garlic finely chopped
  • Grated Parmesan cheese if desired


  • In 10-inch skillet, melt butter over medium heat. Add shrimp and remaining ingredients except cheese. Cook 2 to 3 minutes, stirring frequently, until shrimp are pink. (Do not overcook shrimp or they will become tough.) Remove from heat. Sprinkle with cheese.
