Shrimp Scampi
- ¼-⅓ cup butter
- 1½ lb uncooked, deveined, peeled shrimp thawed if frozen, tail shells removed
- 2 tablespoons thinly slicked green onion
- 1 tablespoon chopped fresh or 1½ teaspoon dried basil leaves
- 1 tablespoon chopped fresh parsley or ¾ teaspoon parsley flakes
- 2 tablespoon lemon juice
- ½ cup white wine
- ¼ teaspoon salt
- 4 cloves garlic finely chopped
- Grated Parmesan cheese if desired
In 10-inch skillet, melt butter over medium heat. Add shrimp and remaining ingredients except cheese. Cook 2 to 3 minutes, stirring frequently, until shrimp are pink. (Do not overcook shrimp or they will become tough.) Remove from heat. Sprinkle with cheese.
