Apple Walnut Cake

- 2 cups sugar
- 3 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1 tsp salt
- 1 ½ cups oil
- 3 large eggs
- 1 tsp vanilla extract
- 3 cups apples chopped, unpeeled
- 1 cup walnuts chopped
- Preheat oven to 350. Grease (but don't flour) 10-12 cup bundt pan.
- Mix sugar, flour, baking soda, and salt in a large bowl until blended. Stir in oil, eggs, and vanilla then apples & nuts.
- Bake 1 hour or until a toothpick comes out clean. Cool 10 min in pan on wire rack before inverting on rack to cool completely.
